Denne dejlige prosecco kommer  fra de stejle bakker bag vingården, som også lægger navn til denne prosecco, Castèl som er den lokale betegnelse for Colle il Castello. "Castèl" var med i finalerunden for de maksimale 3 glas i Gamberro Rosso; men måtte i år 'nøjes' med 2 røde glas.

Vinmark: Col San Martino - Druer: 100% Glera, - Tryk og naturlig gæringsproces i autoclave i ca. 50 dage - Alkohol: 11,5% - Restsukker indhold: 12 g/ltr. - Serveres som aperitif eller til skaldyr.

Technical information


Area of production: Vineyards in Col San Martino.
Type of grapes: 100% Glera.
Method used: On-skins maceration under soft pressure. The must is put into an autoclave for about 50 days then left to rest for a further 120 days on its own yeasts.
Alcohol content: 11,5%
Sugar residue: 12 g/l


Organoleptical features


Colour: Straw yellow with greenish highlights. Mousse - brilliant and fine-grain. Perlage - fine and persistent.
Perfume: The wine has an intense and fragrant aroma of apple and pear with a suggestion of wisteria and acacia flowers.
Taste: Juicy, pulpy and fresh with a perfect fusion of tanginess acidity and softness.
Aftertaste: Wonderfully elegant, long and persistent with a clear overtone of apple.
Food affinities: Ideal as an aperitif, this wine goes well with hors d’oeuvres and delicately-flavoured first courses with fish or white meat.
